Cassoulet Ingredients & Directions
Ellisa’s cassoulet is a fabulous knockoff that you could have in the oven in 30 minutes and on the table in an hour! (Most recipes for cassoulet have more than 30 instructions AFTER three days of prep.)
Here's what you'll need to prep this alongside me:
Dutch oven
Your favorite chicken parts with the skin on (enough for one layer)
Ingredients
Three strips of bacon or pancetta
1 onion, chopped
2 carrots, scrubbed and cut into one-inch pieces
3 - 4 sweet Italian sausage, casing removed
3-5 large garlic cloves
1tbs fresh thyme
1 bay leaf
Kosher salt
Black pepper
1/4 tsp ground cloves
2 cans white beans, rinse and drained
1 can San Marzano tomatoes, drained
Breadcrumbs or panko
1/4 cup finely chopped parsley
Excellent quality baguette
Olive oil
Directions
Heat Dutch oven over medium flame
Add bacon or pancetta
Add sausage
Once nearly rendered, add onion, carrots, garlic, thyme, bay leaf, salt, and pepper
Allow to simmer
Season chicken
Add tomato and beans to pot and bring back to a simmer
Remove from heat and sprinkle with ground cloves
Place chicken pieces on top of bean and sausage mixture, skin side up
Place in a 375 degree oven, uncovered
After 20 minutes, sprinkle panko parsley mixture on top and return to oven for 10 minutes
Allow to stand for five minutes before serving

Viognier 2017
Enjoy the layers of fresh pear and peaches completed with a round and creamy mouthfeel. 70% of the wine underwent cold fermentation in stainless steel tanks for 3 weeks. Racked of primary lees and kept on thin lees for 6 months before bottling. 30% of the wine was fermented and matured in second- and third-fill 300 litre French oak barrels for 6 months before being blended together and bottled.

Babel 2018
This dry, full-bodied red wine is a balanced fusion of dark red berry and chocolate flavours with a soft mouth-feel and juicy, lingering finish.
39% shiraz, 16% cabernet sauvignon, 11% malbec, 11% merlot, 10% petit verdot, 7% cabernet franc and 6% pinotage. Will age well up to 5 years.
